1 Chenin Blanc 2011
Low: 14

Medium straw colour with very slight touch of green. Citrus, granadilla, mineral, melon, apples, nectarine, floral, guava, citrus peel. Peachy nose, peachiness with extra nectarine acidity. Bone dry with lovely touch of bitterness on after taste. A nicely balanced wine. 100% Chenin Blanc. Harvested early in the morning, gently pressed and fermented at 12 degrees centigrade in temperature controlled stainless steel tanks. 1.6 g/l sugar with 12.5% alc and pH of 3.51 Acid 5.6 g/l
2 Osiris Sauvignon Blanc 2011Low: 14High: 16Ave: 15½ Pale straw colour. Grassy, minerally, granadilla, spicy, green pepper. Slight coffee and vanilla on nose, nuttiness. Delicious nose with herbaceous yet creamy after taste. Slight acidic bit – crisp yet not harsh acid. Very very easy on the palate. Early morning harvest from 30 year old vines. Handpicked at 25 balling. Only free run juice was used. Fermented in French oak 300L-400L barrels. 1.5 g/l sugar with 13% alc and pH of 3.41 Acid 6.3 g
3 Lunch Ladies Rosé 2011Low: 13High: 17Ave: 14 → 14½ Pink to pink salmon colour – lovely colour. Chocolate, dark fruits, mint, mineral, meatiness (wet biltong), smokiness, sherbet, black tea, black currant, slight spiciness about it. Very easy drinking. Good fruit and good balance. Intense flavour. 100% Cabernet Sauvignon. Early morning harvest. Grapes then undergo cold maceration for 3 to 4 days to extract soft tannins and ripe fruit flavours before allowing fermentation to begin. Throughout vinification handling was kept to a minimum to ensure that true fruit flavours were retained. 9.9 g/l sugar with 12% alc and pH of 3.73 Acid 5.2 g
4 Cabernet Franc / Merlot 2009Low: 14High: 17Ave: 15½ → 16 Deep plum colour. Cinnamon, herbaceous, tea leaves, nutmeg, earthy, dark fruits, fruit cake, jamy, plums, slight smokiness, savoury, mint, cherry, black currant, strawberry. A delicious wine with a slight sweetness about it. Lovely tannin structure – astringent but with a softness about it, fine and smooth. Savoury finish. A complex wine. Cabernet Franc 78% and Merlot 22%. Harvested at 25 balling, handpicked and delicately crushed. Cold soaked through the night. Enoculated the next morning, pump overs every 4 hours. Lightly pressed and matured in French oak barrels for 18 months. 3.6 g/l sugar with 14% alc and pH of 3.52 Acid 5.5 g
5 Cabernet Sauvignon 2008Low: 15High: 17Ave: 16½ Deep inky black plum colour. Cigar box, pencil lead, dark fruits, mint, chocolate, fynbos, spicy, mineral, black currant, savoury, smoky, liquorice. Tea leaves character. Soft but firmish tannins. Medium bodied and drinking beautifully. A superb and very elegant wine. Early morning harvest. Grapes then undergo skin contact / cold maceration for 3 to 4 days to extract soft tannins and ripe fruit flavours before allowing fermentation to begin. Throughout vinification handling was kept to a minimum to ensure that true fruit flavours were retained. Matured in medium toasted French Oak for 12 months. 2.0 g/l sugar with 13.77% alc and pH of 3.75 Acid 5.7 g
6 Osiris Shiraz 2009Low: 16High: 18Ave: 17 Deep inky plum colour. Spicy, cloves, black cherries, chocolate, vanilla pod, toffee, savoury, floral, violets, slight black pepper, eucalyptus, spearmint. Violets on nose – lots of violets. Incredibly soft with amazing fruit. Very drinkable and accessible. Fruit, acid and tannin all in balance. Very fine, silky tannins. A fantastic, elegant wine with very interesting flavours. 100% Shiraz. Grapes harvested from very low yielding trellesed vine at 6 tons/ha. Handpicked early morning, delicately destalked and crushed. Cold soak macuration overnight. Inoculated and pumpovers occurred every 4 hours. Only free run juice was used. Malolactic fermentation in new French oak barrels and further matured for 24 months. 3.0 g/l sugar with 14% alc and pH of 3.6 Acid 5.7 g
7 Osiris Pinotage 2009Low: 16High: 19Ave: 18 Very deep plum colour. Mulberry, strawberry, boiled sweets, dried jasmine tea, chemicals, acetone. Firm tannins. Incredible richness and intensity. Something quite special. Delicious and wow. A fantastic and beautiful wine. 100% Pinotage. Grapes harvested from very low yielding bushvine at 2 tons/ha. Handpicked early morning, delicately destalked and crushed. Cold soak macuration overnight. Inoculated with special yeast where pumpovers occurred every 4 hours. Only free run juice was used. Malolactic fermentation in new French oak barrels and further matured for 24 months. 2.1 g/l sugar with 14.5% alc and pH of 3.6 Acid 6.0 g
